The work

Two jobs for one kitchen.

A restaurant needs pictures that sell a dish from a menu or a post, and films that show the dish being made. This selection does both, with the same people and the same oven in each.

  • Plates for the menu

    The finished dish on the table it is served at — a pizza Bresaola, a breaded cutlet on purée — framed close enough to read at the size of a thumbnail.

  • The people who cook

    The pizzaiolo at the wood-fired oven, the chef at the stove, a pan going up in flame. The kitchen has faces, and the menu has someone behind it.

  • Reels for the feed

    Two vertical cuts that open on the finished dish, go back to make it, and close on it at the table — captioned in German for the venue’s own audience.

Still and motion

The same dish, twice.

Each reel has a photograph from the same kitchen beside it: the pizza Bresaola as the menu shows it and as it is made, and the chef at his stove beside the risotto he takes from pan to plate. Both reels are built the same way — the finished dish first, the making in the middle, the table at the end.

The light

The dining room is photographed dark — low, warm, lit by the oven and the lamps — and the kitchen in its own hard, bright light. The charts are each photograph’s tones from black to white, read from the files: the room’s pictures sit in the shadows, the kitchen’s climb to white.
